Mineral-Rich Vegan Spa Broth

The benefits of a good broth are mighty. Our tried-and-true Mineral-rich Vegan Spa Broth recipe includes plenty of anti-inflammatory ingredients like ginger and turmeric, and medicinal mushrooms like Reishi. Make a big batch of this immune boosting elixir to sip through the first wild and wooly weeks of January to help keep your immunity game strong. 

4 qt. water
1 oz Kombu*
2 bay leaves
1/2 oz dried Reishi mushrooms
1/2 oz dried Shiitake mushrooms
2 cups celery stalks and leaves, chopped
1/2 onion, chopped
2 cloves of garlic, peeled 
3 medium carrots, chopped
1 small fennel bulb, chopped
1 thumb-sized piece of fresh ginger root (peeled and minced)
1 thumb-sized piece of fresh turmeric root (peeled and minced)
2 tsp pink Himalayan or sea salt
1 tsp black or red peppercorns 

— Rinse and chop vegetables.

— Peel garlic and chop onion.

— Peel and chop ginger and turmeric.

— Add all ingredients to a large pot, bring to a boil, lid on.

— Turn heat down to low, slide the lid half way off the pot, and simmer for about an hour.

— Cool, strain and store in jars.

Mineral-rich Vegan Spa Broth will keep for several days in the fridge — and you can also freeze it. Enjoy throughout the day like tea or consume as part of a healthy meal. Happy #SelfCareSunday!
